What will the Leaders of the 21 APEC member economies be
served at the dinner following the first APEC Leaders'
meeting on November 18?
The concept of the dinner menu is "Beautiful Korean Dishes
with the Power to Revitalize." Dishes were chosen to present
a harmonious blend of taste, color, and nutritional value.
The first dish that will be served is a scallop and ginseng
salad. The rich protein found in the seafood and the
restorative power of the ginseng will help the Leaders
recover from their long journey. The next dish on the menu
is chestnut porridge, which will also help to rejuvenate the
guests.
The main course will be grilled king prawns, along with
grilled beef garnished with fragrant pine mushrooms,
followed by steamed rice and sinsunno, a traditional Korean
dish cooked at the table in a special brass platter. Side
dishes will include red and white kimchi, seasonal
vegetables and fried laver.
Finally, assorted Korean pastries, along with fresh fruit
and citron punch, will be served for dessert.
A traditional Korean wine made from mushrooms by the
Millennium Promise company in Busan will be used during the
official toast. The dinner wines have been selected from the
vineyards of two APEC member economies: the white wine will
be a sauvignon blanc from the Canon Road vineyards in the
United States, and the red wine will be a cabernet sauvignon
from the Montes Alpha M vineyards of Chile. Bok Bun Ja Joo,
a sweet traditional wine made from black raspberries. will
be used following the meal as a dessert wine.
